Zucchini Fritters with Vegan Sour Cream

Ingredients

  • For the Zucchini Fritters:
  • 2 tablespoons chia seeds
  • 6 tablespoons water
  • 2 medium zucchini
  • 4 tablespoons all-purpose flour
  • 4 tablespoons bread crumbs
  • salt and pepper, to taste
  • For the Vegan Sour Cream:
  • 2/3 cup cashew nuts, soaked in hot water for 15 minuets
  • 1 tablespoon sunflower seeds
  • 1/2 tablespoon sesame seeds
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon lemon juice
  • 150 ml water
  • salt, to taste

Method

  1. Mix chia seeds and water together in a small bowl and let it sit for 10 - 15 minutes until the mixture becomes gel.
  2. Grate zucchini and squeeze out as much excess moisture as possible. Transfer to a bowl. Mix in chia seed mixture, flour and bread crumbs. Season to taste.
  3. Heat olive oil in a frying pan over low heat. Drop about 2 tablespoons of the mixture in the pan and flatten slightly. Cook on both sides for about 3 minutes or until golden brown.
  4. Make vegan sour cream. Drain the cashews and place into a blender and add the rest of the ingredients. Pulse until creamy and smooth. Serve the fritters warm with vegan sour cream. Enjoy!
