15-Minute Zucchini Tomato Pasta

This pasta recipe is a quick dinner fix for a busy weeknight. Ready in 15 minutes, both grown ups and kids will love it and also budget friendly.

Ingredients

  • 1 pack pasta of your choice
  • 1 tablespoon olive oil
  • 1 medium zucchini, chopped
  • 2 cups cherry tomatoes
  • 1 cup diced tomatoes
  • 1 teaspoon Tuscan seasonings
  • salt and pepper, to taste
  • fresh parsley, for serving

Method

  1. Cook pasta according to the package directions. In a large frying pan heat olive oil over medium heat. Add zucchini and cook for 5 minutes. Add in cherry tomatoes and cook for another 5 minutes.
  2. Drain pasta and add it to the pan with diced tomatoes, toss to combine and add seasonings. Cook for another 5 minutes. Serve warm, garnished with fresh parsley. Enjoy!
