Baked Gnocchi with Spinach and Creamy Mushroom Sauce

  • 500 g fresh potato gnocchi
  • 3 cups baby spinach
  • 1/2 cup grated cheese
  • For the Mushroom Sauce:
  • 1 tablespoon butter
  • 1 small white onion, finely chopped
  • 4 cups finely sliced mushrooms
  • 1 1/2 cups sour cream
  • small bunch fresh coriander or parsley, chopped
  • salt and pepper, to taste


  1. Cook gnocchi by placing carefully into boiling salted water. Drain and set aside.
  2. Make the sauce. Melt butter in a large frying pan over medium heat. Add onions and cook for 5 minutes until golden brown. Add mushrooms and cook for another 10 minutes. Add in sour cream and stir to combine, bring to a boil and simmer for 2-3 minutes. Add in coriander, stir to combine and take away from the heat.
  3. Preheat oven to 180°C and grease a baking dish. Place gnocchi and spinach into the prepared baking dish, toss to combine. Pour the mushroom sauce over the gnocchi and sprinkle with grated cheese. Bake for 10-15 minutes or until the cheese has melted and the top is crispy. Serve immediately and enjoy!
