Beetroot and Lentil Burgers

I made these easy beetroot and lentil burgers and they were full of flavor and also packed with protein.

  • For the Lentil Fritters:
  • 2 cups cooked lentils
  • 2 carrots grated
  • 1 garlic clove, minced
  • 2 tablespoons chia seeds
  • 2 tablespoons water
  • 1/2 cup breadcrumbs
  • 1/4 cup all-purpose flour
  • oil, for frying
  • To Assemble:
  • 6 burger buns
  • 3 cooked beetroots, grated
  • dairy-free cheese
  • avocado slices
  • tomato slices
  • baby spinach
  • pickle slices


  1. Place all the fritter ingredients into a blender and process until smooth. Form 6 fritters. Heat vegetable oil in a large skillet over medium heat. Fry the fritters for 3 minutes on each side until golden.
  2. Assemble your burgers and enjoy immediately.

Additional Info

How to cook beets in 5 minutes: Peel the beetroot and place it in a plastic bag, seal the bag, arrange on a plate and microwave for 5 minutes.
