Broccoli and Mushroom Thai Rice

Sweet and savory meal for lunch or dinner, packed with veggies and full of flavor.

  • 350 grams Basmati rice
  • 3 tablespoons sesame oil
  • 2 cups bite-sized broccoli florets
  • 1 medium carrot, grated
  • 250 grams Shiitake mushrooms
  • 1 large yellow bell pepper, diced
  • 1 large red bell pepper, diced
  • 1 small onion, chopped


  1. Rinse the rice under running water and drain. Place in a saucepan and fry briefly in 2 tbsp oil. Add pinch of salt and pour in 700 ml water and cook on a low heat for about 25 minutes or until soft.
  2. Boil broccoli in salted water for around 8 minutes,drain. Heat the remaining oil in a frying pan. Add in the broccoli, carrots, mushrooms, peppers and onions, fry briefly. Add the soy sauce and lime juice, then add the rice and heat through.
  3. Serve in bowls, garnished with fresh parsley or cilantro.
