Carrot Zucchini Curry

Yields: 2-4


  • 1 small onion, chopped
  • 1 large zucchini, cut into cubes
  • 2 carrots, grated
  • 3 tomatoes, chopped
  • 1 tablespoon tomato paste
  • 1/2 cup water or vegetable stock
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon turmeric
  • salt and pepper, to taste
  • fresh parsley or cilantro, for serving
  • mashed potatoes, for serving


  1. Heat oil in a saucepan over medium heat. Add onion and cook for 3 minutes until golden. Add the rest of the ingredients, stir to combine. Bring the mixture to boil and simmer for 20-25 minuets until vegetables are soft. Serve warm with mashed potatoes and parsley. Enjoy!
