Creamy Coconut Vegetable Korma

  • oil of your choice, for frying
  • 1 small white onion, finely diced
  • 2 garlic cloves, minced
  • 1 teaspoon curry powder
  • 1 teaspoon Garam Masala
  • 1 teaspoon ground ginger
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric
  • salt and pepper, to taste
  • 1 teaspoon chili powder or to taste
  • 4 white potatoes, peeled and cubed
  • 3 small carrots, peeled and cubed
  • 1 small broccoli head, cut into florets
  • 1 cup green peas
  • 1/2 cup water
  • 1 1/2 cups coconut milk


  1. In a large heavy pot heat oil and add garlic, cook for 30 seconds. Add in onions and cook for 2-3 minutes until golden brown. Add the spices and season to taste, cook for 1 minute. Add potatoes, carrots, broccoli, peas and water, cover the pot and simmer for 10 minutes. Add in coconut milk and cook for another 10-15 minutes, stirring occasionally until the potatoes are cooked through.
  2. Serve warm with naan bread or rice. Enjoy!
