Easy Black Bean and Corn Veggie Burgers

The best and easiest recipe for a homemade veggie burger made with black beans and corn. Packed with fibre and protein, tastes amazing and will satisfy even the biggest appetite.

    For the Burgers:
  • 1 tablespoon ground flax meal
  • 3 tablespoons water
  • 1 tablespoon dairy-free butter
  • 1 small white onion, finely chopped
  • 1 cup canned organic black beans
  • 1 cup corn kernels
  • 1 cup chopped cilantro
  • 1/2 cup bread crumbs or rolled oats
  • 1 teaspoon cumin
  • 1 teaspoon sweet paprika
  • salt and pepper, to taste
  • To Serve:
  • 4 whole-meal buns, toasted
  • fresh rocket
  • tomato slices
  • dairy-free cheese slices
  • 2 mashed avocados
  • tomato sauce


  1. In a small bowl combine flax seed meal with water and let sit until the mixture becomes gel. In a frying pan melt the butter over medium heat and add onions. Cook for 5 minutes or until golden brown. Remove from the heat and set aside.
  2. Drain the beans and add them to a food processor with corn, pulse for 30 seconds. Add in onions, flax seed mixture, cilantro, bread crumbs, spices and season to taste. Process until the mixture comes together and forms a sticky paste.
  3. In a frying pan heat olive oil over medium heat. Form 4 burgers with your hands. Fry for about 5 minutes on both sides until golden brown and cooked through or pop them in the oven instead.
  4. Assemble the burgers. Spread tomato sauce on to the bottom bun, followed by mashed avocado, burger patty, cheese slice, tomatoes and rocket. Spread some tomato sauce on the top bun as well and place it on top of the burger. Repeat with all the remaining buns and ingredients. Enjoy right away!
