Spicy and creamy chickpea masala with a few additional ingredients makes a perfect and satisfying plant-based curry.

Ingredients
1 small white onion, finely chopped
2 garlic cloves, minced
3 medium tomatoes, chopped
2 tablespoons tomato paste
2 cups cooked chickpeas
1 cup sliced black olives
1 teaspoon ground cumin
1 teaspoon paprika
1teaspoon ground ginger
1 teaspoon garam masala
1 teaspoon turmeric
1/2 teaspoon cayenne pepper or to taste
salt, to taste
fresh parsley, for serving
cooked brown rice, for serving
Method
In a large saucepan heat oil and add onions and garlic. Cook for 1 minute. Add in tomatoes and cook for 5 minutes. Add tomato paste, chickpeas, olives and seasonings. Cook for about 10 minutes until the chickpeas are heated through. Serve with brown rice and fresh parsley. Enjoy.
