Eggplant and Mushroom Stroganoff with Mashed Potato

  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 large carrot, diced
  • 2 eggplants, cut into cubes
  • 2 cups sliced mushrooms
  • 3 tomatoes, chopped
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • salt & pepper to taste
  • fresh basil leaves, for serving
  • mashed potato, for serving


  1. In a large saucepan over low heat, add oil, garlic and onions. Cook for 3-5 minutes or until golden brown. Add carrot, eggplant, mushrooms, tomatoes, spices and season to taste. Cook for about 25 minutes or until veggies are soft. Serve the eggplant stroganoff warm, with mashed potato and garnished with basil. Enjoy!
