Fried Cauliflower Rice with Mushrooms and Spinach

Easy recipe for a quick lunch or dinner. Using just 5 ingredients this vegan cauliflower fried rice will become your favourite meal in no time.

Yields: 2-4


  • 1 medium head cauliflower, cut into florets
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 small white onion finely chopped
  • 2 cups sliced mushrooms
  • 1 teaspoon oregano
  • 1/2 teaspoon thyme
  • salt and pepper, to taste
  • 2 cups baby spinach
  • fresh parsley, for garnishing


  1. Place cauliflower florets into a food processor and pulse until mixture resembles small grains of rice. In a frying pan over medium heat sauté onions and garlic for 3-5 minutes or until golden. Add in mushrooms, cauliflower rice, spices and season to taste. Cook for 10 minutes until vegetables are cooked through and soft. Add in spinach and cook for another 3 minutes. Serve warm garnished with fresh parsley. Enjoy!
