Green Beans and Minced Tofu Noddle Vegan Stir Fry

Stir fry is a perfect weeknight dinner idea. Try this protein packed noodle vegan stir fry with green beans and minced tofu. Easy to follow recipe and so delicious.

  • 1 pack noodles of your choice
  • 300 g firm tofu, cubed
  • 1 tablespoons seame oil
  • 2 garlic cloves, minced
  • 3 cups sliced mushrooms
  • 300 g green beans
  • 1 cup green peas
  • 4 tablespoons soy sauce
  • 1 teaspoon ground ginger
  • 1 teaspoon maple syrup
  • freshly chopped chives
  • sesame seeds, for serving
  • fresh cilantro, for serving


  1. Cook noodles according to the package directions. In a bowl using a fork mince tofu cubes. While noodles are cooking heat oil in a large frying pan or a wok over medium heat. Add garlic and cook for 30 seconds. Add mushrooms, beans and peas. Cook for 10 minutes.
  2. Once the noodles are ready drain them and add to the pan with tofu, soy sauce, ginger, maple syrup and chives. Toss to combine and cook for another 3 minutes. Serve warm garnished with fresh cilantro and sesame seeds. Enjoy!
