Low carb pizza crust and lots of green veggies on top, who wants a slice ?

For The Cauliflower Crust:
1 small cauliflower head
1 tablespoon chia seeds
3 tablespoons water
1/2 cup shredded dairy-free cheese
salt and pepper, to taste
For the Pizza Toppings:
Preheat oven to 180°C and line a pizza tray with parchment paper. Mix chia seeds and water together in a small bowl and let it sit for 10-15 minutes until the mixture becomes gel.
Place cauliflower into the food processor and pulse until finely ground. Using a tea towel drain cauliflower completely, removing as much liquid as possible, place in a large bowl. Add in chia seed mixture, cheese and seasonings, mix to combine.
Transfer cauliflower mixture on the prepared pizza tray, then use a spoon to spread out into a 30 cm round. Bake for 20 minutes until golden brown. Add toppings and bake for an additional 10 minutes. Serve immediately and enjoy!
