Super Green Falafel Burger with Tzatziki Sauce

Make the perfect burger at home. This juicy falafel burger is super easy to make and it`s packed with plant protein and fibre. Served with fresh veggies and creamy Tzatziki sauce.

Ingredients

    For the Falafels:
  • 200 g organic canned chickpeas
  • 1 teaspoon cumin seeds
  • 2 tablespoons chickpea flour
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup chopped parsley
  • 1/2 onion, finely chopped
  • 1 cup chopped kale
  • 1 garlic clove, minced
  • 1/4 cup olive oil
  • salt and pepper, to taste
  • For Tzatziki Sauce:
  • 1 cup Greek yogurt (use dairy-free yogurt, if vegan)
  • 1 medium cucumber, chopped
  • 1 garlic clove, minced
  • 1/2 cup chopped dill
  • 1/3 cup chopped chives
  • 5 mint leaves, chopped
  • 1 tablespoon lemon juice
  • salt and pepper, to taste
  • To Assemble:
  • tomato slices
  • cucumber slices
  • red onion slices
  • lettuce or rocket
  • 4 burger buns

Method

  1. Preheat oven to 180°C and line a baking tray with parchment paper. Place all the ingredients into a blender and process until smooth. Add more flour or oil if needed.
  2. Form the mixture into burger patties and arrange on the baking tray. Bake for 25 minutes or until golden brown on top.
  3. Make Tzatziki sauce. In a mixing bowl combine all the ingredients and season to taste.
  4. Assemble the burgers. Spread about 1 teaspoon of the Tzatziki sauce on the bottom bun, followed with falafel patty, more sauce, tomato slices, cucumber, onions, lettuce/rocket, and the top burger bun. Enjoy right away!
