Loaded Baked Sweet Potato with Beans and Tomato Sauce

Looking for an easy lunch or dinner recipe with minimum ingredients from your pantry, here is one. Baked sweet potato loaded with quinoa, white beans and tomato sauce.

  • 2 medium sweet potatoes
  • 1/2 cup quinoa
  • 1 can organic white beans
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasonings
  • 1 cup fresh or frozen basil leaves
  • avocado slices, for serving
  • hemp seeds, for serving


  1. Preheat oven to 180°C and line a baking tray with parchment paper. Cut sweet potatoes in a half lengthwise and poke them with a fork. Arrange on the prepared baking tray and bake for 40-45 minutes or until soft.
  2. Meanwhile cook quinoa according to the package directions. In a sauce pan add diced tomatoes over medium heat, bring to a boil. Add in beans, seasonings and basil, bring to a boil. Simmer for 30 minutes or until the sauce has thickened.
  3. Remove sweet potatoes from the oven and place on serving plates. Using a fork fluff out the sweet potato flesh and top with cooked quinoa and tomato bean sauce. Serve warm with avocado slices and garnish with hemp seeds. Enjoy right away!
