Marinated BBQ Veggie Skewers

  • 1 kg vegetables of choice
  • For the Marinade:
  • 1/4 cup lemon juice
  • small bunch parsley, finely chopped
  • 1–2 garlic cloves, minced
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon apple sider vinegar
  • 1 teaspoon dry basil
  • 1 teaspoon paprika
  • 1 teaspoon raw brown sugar
  • salt and pepper, to taste


  1. Place vegetables in a plastic bag, add all the marinade ingredients. Seal the plastic bag and give it a good shake, so the vegetables will coat evenly with oil and spices. Leave in the plastic bag for 1 to 2 hours to marinade.
  2. Preheat barbecue to medium-low heat. Assemble skewers by adding the vegetables in layers to the skewers. Grill for about 8 to 10 minutes, then turn them over and grill another 7 to 8 minutes, until golden brown. Serve immediately and enjoy!
