Place vegetables in a plastic bag, add all the marinade ingredients. Seal the plastic bag and give it a good shake, so the vegetables will coat evenly with oil and spices. Leave in the plastic bag for 1 to 2 hours to marinade.
Preheat barbecue to medium-low heat. Assemble skewers by adding the vegetables in layers to the skewers. Grill for about 8 to 10 minutes, then turn them over and grill another 7 to 8 minutes, until golden brown. Serve immediately and enjoy!
