Mexican Deep-Dish Pizza

  • For the Pizza Crust:
  • 1/2 cup warm water
  • 1 teaspoon raw brown sugar
  • 35 grams dry yeast
  • 2 1/2 cups all-purpose flour
  • 1 tablespoon extra-virgin olive oil
  • For the Pizza Toppings:
  • 1/2 cup pizza sauce
  • 1 cup cooked back beans
  • 1 cup corn kernels
  • 2 medium tomatoes, diced
  • 1 large capsicum, diced
  • 1-2 avocados, cubed
  • small bunch fresh cilantro, finely chopped
  • 1/2 cup grated dairy-free cheese
  • salt and pepper, to taste


  1. In a small bowl combine warm water, sugar and dry yeast. Let the mixture sit for 10 minutes until it becomes foamy. Place flour in a large mixing bowl. Make a well in the centre, then pour in the yeast mixture and oil, slowly combine, gradually bringing more of the flour into the centre until a dough forms. Kneed for 10 minutes into a ball. Place dough in a lightly oiled bowl and cover with plastic wrap. Set aside to rise for 1 hour until it doubles in size.
  2. Preheat oven to 180°C and grease a 20cm spring form. On a slightly floured surface roll out the dough into a large circle and press into the prepared spring form covering the bottom of the pan and over the sides. Prick bottom and sides of the dough with a fork. Bake 10 to 15 minutes or until the crust is golden brown.
  3. Take the crust out of the oven, don’t turn the heat off. Spread with pizza sauce, add all the remaining toppings, season to taste and sprinkle dairy-free cheese on top. Bake for another 20-25 minutes. Serve immediately and enjoy!
