One Pot Vegan Hearty Vegetable Stew

Winter is a perfect time for a hearty and comfortable dishes. Warm yourself up with this nourishing one pot vegan vegetable stew.

  • 1 tablespoon olive oil
  • 1 white onion, finely chopped
  • 1 sweet potato, peeled and diced
  • 2 carrots, peeled and diced
  • 2 medium tomatoes, diced
  • 2 tablespoons tomato paste
  • 1 large zucchini, diced
  • 2 bay leaves
  • 1 teaspoon oregano
  • 1/2 cup vegetable broth
  • salt and pepper, to taste
  • fresh parsley, for garnishing
  • cooked basmati rice, for serving


  1. In a large pot heat oil over medium heat, add onions and cook for a couple of minutes. Add the rest of the ingredients and cover the pot. Cook for 35-45 minutes until sweet potatoes are soft. Serve the stew warm, garnished with fresh parsley and basmati rice. Enjoy immediately.
