1 cup mixed grated carrots and purple cabbage (optional)
freshly ground black pepper and salt
oil for brushing
Preheat your BBQ to a medium-hight heat. Place mushrooms, tomato, onion and halloumi slices on a plate and brush both sides lightly with oil. Season with salt and pepper and place on the grill. Cook for about 3 mins on each side or once golden brown grill marks appear.
Assemble the burger. From bottom to top: bun, green salad leaves, grilled tomatoes, grilled portobello mushroom, cheese, grilled onion, carrots and cabbage (optional), rocket leaves, hummus and bun. Enjoy!
