Portobello Mushroom Burger with Halloumi Cheese

  • 4 burger buns
  • 4 large portobello mushrooms, buttons removed
  • 2 tomatoes, sliced 5mm tick
  • 1 small red onion, sliced
  • 4 halloumi cheese slices, about 1 cm tick
  • beetroot hummus
  • fresh green salad and rocket leaves
  • 1 cup mixed grated carrots and purple cabbage (optional)
  • freshly ground black pepper and salt
  • oil for brushing


  1. Preheat your BBQ to a medium-hight heat. Place mushrooms, tomato, onion and halloumi slices on a plate and brush both sides lightly with oil. Season with salt and pepper and place on the grill. Cook for about 3 mins on each side or once golden brown grill marks appear.
  2. Assemble the burger. From bottom to top: bun, green salad leaves, grilled tomatoes, grilled portobello mushroom, cheese, grilled onion, carrots and cabbage (optional), rocket leaves, hummus and bun. Enjoy!


Use dairy-free cheese if vegan.
