Pulled BBQ Carrot Vegan Burgers

Smoky, juicy and mouthwatering . Try these vegan burgers with pulled carrots in home made BBQ sauce.

  • 1 tablespoon olive oil
  • 100 grams firm tofu, sliced about 5 mm thick
  • 1 can organic no salt added chickpeas
  • 3 medium carrots, grated
  • 1 small white onion, finally chopped
  • salt and pepper, to taste
  • 1 cup shredded purple cabbage
  • 4 burger buns
  • For the BBQ Sauce:
  • 1 cup tomato paste
  • 1 teaspoon smoked paprika
  • 3 tablespoons maple syrup
  • 1/2 teaspoon garlic powder
  • 2 teaspoons liquid smoke
  • 1 tablespoon apple cider vinegar
  • salt and pepper, to taste


  1. Make the BBQ sauce. Place all the ingredients in a small pot over medium low heat and stir to combine. Bring to a simmer, then reduce heat to low. Simmer for about 10 minutes or until thickened. Set aside and let cool.
  2. Preheat oven to 180°C and line a baking tray with parchment paper. Spread the carrots chickpeas and onions evenly on the prepared baking tray. Sprinkle with oil and season to taste. Roast for 40-45 minutes or until carrots are soft and chickpeas are crispy.
  3. In a frying pan or grill pan heat oil over medium heat. Fry tofu on both sides until golden brown. Once carrots are ready take out from the oven and let cool slightly. In a mixing bowl combine roasted carrots and chickpeas with BBQ sauce.
  4. Assemble the burgers. Place carrot mixture between two burger buns and top with grilled tofu and cabbage. Repeat with the remaining burger buns and ingredients. Enjoy immediately.
