Inspired by my last holiday to Sri Lanka I made this comforting lentil curry and it was so good.

Cook Time: 20 mins
Yields: 2-4
Ingredients
75 grams dairy free butter
1 small onion, finely chopped
1 carrot, grated (optional)
2 garlic cloves, crushed
1 teaspoon cumin seeds
1 teaspoon whole mustard seeds
1 teaspoon turmeric
1 teaspoon chili powder
4 thick slices fresh ginger
1 cup red lentils
2 cups coconut milk
2 cups water
salt and pepper, to taste
fresh coriander, chopped
Method
In a large pan fry onions with butter, until golden. Add carrots, (if using), garlic, cumin, mustard seeds, turmeric, chili, ginger and cook for 30 seconds.
Add lentils, coconut milk and water, stir to combine. Season with salt and pepper and cook on a low heat for 15-20 minutes until lentils are soft and thick. Stir in coriander.
Serve warm with rice or quinoa and naan bread. Enjoy!
