Roast Brussels Sprouts Tortellini with Spinach Pesto

Yields: 2-4


  • 1 pack pasta of your choice
  • 2 cups brussels sprouts
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon Italian seasonings
  • For the Spinach Pesto:
  • 1 cup spinach
  • 1/2 cup fresh parsley
  • 1/4 cup pine nuts
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • salt and pepper, to taste


  1. Preheat oven to 180°C and line a baking tray with parchment paper. Toss brussels sprouts with oil and seasonings. Arrange on the baking tray and roast for 20 minutes or until tender.
  2. Cook pasta according to the package directions. Make spinach pesto. Add all the ingredients into a blender and process until smooth.
  3. Drain pasta and place in a large bowl. Add in roasted brussels sprouts and spinach pesto, toss to combine. Enjoy immediately!
