Roasted Bell Pepper and Garlic Pasta with Herbs

  • 2 bell peppers, sliced and seeds removed
  • 1 pack pasta of your choice
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • small bunch of parsley, chopped
  • small bunch of dill, chopped
  • handful fresh basil, chopped
  • salt and pepper, to taste
  • grated dairy-free cheese, for serving


  1. Preheat oven to 180°C and grease a baking tray. Arrange pepper slices on the prepared baking tray, season to taste and roast for about 20 minutes or until tender.
  2. Meanwhile cook pasta according to the package directions, drain and set aside. Take the pepper slices out of the oven. In a large pan heat oil over medium heat, add garlic and cook for 30 seconds. Add in pepper slices, herbs and pasta, mix well and cook for 5-8 minutes.
  3. Before serving, sprinkle pasta with grated dairy-free cheese and enjoy immediately!
