Roasted Eggplant Zucchini and Peppers

Yields: 4


  • 3 tablespoons olive oil
  • 1 cup of sliced red, orange, or yellow bell peppers
  • 2 eggplants, cut into cubes
  • 2 zucchinis, cut into cubes
  • 1 cup snow peas
  • spices of your choice (I used Italian seasonings, oregano, sweet paprika and cayenne pepper)
  • salt to taste
  • fresh parsley leaves and roasted almonds, for garnishing


  1. Preheat oven to 180°C and line a baking tray with parchment paper.
  2. In a large mixing bowl toss all the vegetables together, season with olive oil and spices. Leave for 30 minutes to marinate.
  3. Arrange the vegetables on a tray and bake for about 20 minutes or until tender.
  4. Sprinkle with fresh parsley leaves and roasted almonds before serving. Enjoy!
