Lazy dinner recipe, cause some nights you just can’t be bothered to prepare a fancy meal.
1 small zucchini, cubed
2 carrots, grated
1 cup chopped mushrooms
2 cups cherry tomatoes
1 red onion, sliced
1 teaspoon Italian seasonings
2 tablespoons olive oil
salt and pepper, to taste
fresh parsley, finally chopped
fresh dill, finely chopped
fresh chives, finely chopped
Preheat oven to 180°C. Toss all the vegetables with olive oil and seasonings.
Place in the baking dish and bake for about 30 mins or until tender. Before serving garnish with fresh parsley, dill and chives. Enjoy.
