Roasted Vegetables

Lazy dinner recipe, cause some nights you just can’t be bothered to prepare a fancy meal.

My Recipe

Prep Time: 15 mins
Cook Time: 30 mins
Yields: 4

Ingredients

  • 1 small zucchini, cubed
  • 2 carrots, grated
  • 1 cup chopped mushrooms
  • 2 cups cherry tomatoes
  • 1 red onion, sliced
  • 1 teaspoon Italian seasonings
  • 2 tablespoons olive oil
  • salt and pepper, to taste
  • fresh parsley, finally chopped
  • fresh dill, finely chopped
  • fresh chives, finely chopped

Method

  1. Preheat oven to 180°C. Toss all the vegetables with olive oil and seasonings.
  2. Place in the baking dish and bake for about 30 mins or until tender. Before serving garnish with fresh parsley, dill and chives. Enjoy.
