Roasted Zucchini with Fresh Veggies and Tahini Dressing

Ingredients

  • 4 zucchinis, sliced in halves
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon Italian seasonings
  • fresh veggies of your choice, for serving
  • For the Tahini Dressing:
  • 1 tablespoon raw tahini paste
  • 2 tablespoons warm water
  • 1 tablespoon lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon coconut milk
  • 1 tablespoon maple syrup
  • pinch of salt
  • 1/2 teaspoon black pepper

Method

  1. Preheat oven to 180°C and line a baking tray with parchment paper.
  2. Toss zucchini slices with oil and seasonings. Arrange on the baking tray and bake for about 20 minutes or until tender.
  3. Make the dressing. Place all ingredients in a blender and process until smooth and creamy. Add more water if needed.
  4. Serve roasted zucchini with fresh veggies of your choice and tahini dressing, for garnishing. Enjoy.
