3 cups sliced swiss brown mushrooms
1-2 garlic cloves, minced (optional)
small bunch fresh parsley + more for serving
1 teaspoon thyme
1 teaspoon rosemary
salt and pepper, to taste
1 tablespoon olive oil
1 pack spinach tagliatelle or any pasta of your choice
In a large pan heat oil over medium heat and add garlic, cook for 1 minute. Add sliced mushrooms and parsley, toss to combine and cook for 5 minutes. Add spices and season to taste, cook for an additional 5 minutes or until mushrooms are golden brown.
Cook pasta according to the package directions. Serve pasta warm topped with sauteed mushrooms and fresh parsley. Enjoy immediately.
