Spinach Tagliatelle with Swiss Brown Mushrooms

Nothing like a good plate of freshly cooked pasta accomplished with fragrant sauteed swiss brown mushrooms.

  • 3 cups sliced swiss brown mushrooms
  • 1-2 garlic cloves, minced (optional)
  • small bunch fresh parsley + more for serving
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 pack spinach tagliatelle or any pasta of your choice


  1. In a large pan heat oil over medium heat and add garlic, cook for 1 minute. Add sliced mushrooms and parsley, toss to combine and cook for 5 minutes. Add spices and season to taste, cook for an additional 5 minutes or until mushrooms are golden brown.
  2. Cook pasta according to the package directions. Serve pasta warm topped with sauteed mushrooms and fresh parsley. Enjoy immediately.
