Spring Pasta with Mushrooms and Zucchini

  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 zucchini sliced into thin strips
  • 2 cups sliced mushrooms
  • 1 small bunch fresh parsley
  • 1 teaspoon Italian seasonings
  • 1 pack pasta of your choice
  • salt and pepper, to taste


  1. In a frying pan heat oil over medium heat add garlic and cook for 30 seconds. Add in zucchini, mushrooms and parsley. Cook for 10-15 minutes or until tender.
  2. Meanwhile cook pasta according to the package directions. When pasta is ready, drain and add to the pan with zucchini and mushrooms. Switch the heat off and toss well to combine. Serve warm and enjoy immediately.
