Tofu “Pulled Pork” Vegan Burgers

Ingredients

  • 4 burger buns
  • 400 g firm tofu, drained and grated
  • 1 tablespoon olive oil
  • For the BBQ Sauce:
  • 1 cup tomato paste
  • 1 teaspoon smoked paprika
  • 3 tablespoons maple syrup
  • 1/2 teaspoon garlic powder
  • 2 teaspoons liquid smoke
  • 1 tablespoon apple cider vinegar
  • salt and pepper, to taste
  • For the Tabbouleh:
  • small bunch parsley, finely chopped
  • 1/2 white onion, finely chopped
  • 1/2 cup mint leaves, finally chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon sesame seeds
  • 1 tablespoon olive oil
  • salt and pepper, to taste

Method

  1. Make the BBQ sauce. Place all the ingredients in a small pot over medium low heat and stir to combine. Bring to a simmer, then reduce heat to low. Simmer for about 10 minutes or until thickened. Set aside.
  2. Make the tabbouleh. In a mixing bowl combine all the ingredients together.
  3. Heat oil in a large frying pan over medium heat. Add tofu and half of the BBQ sauce, stir well to combine. Cook for 5 minutes or until the tofu is heated through.
  4. Assemble the burgers. Spread the remaining BBQ sauce on the bottom of each burger bun. Add about 2 tablespoons of the tofu mixture, followed by 1 tablespoon of tabbouleh and the top burger bun. Serve and enjoy immediately!
