Vegan Bean Stuffed Baked Peppers

  • 4 yellow peppers, sliced lengthwise and deseeded
  • 1 tablespoon olive oil
  • 1 small white onion, finely chopped
  • 2 garlic cloves, minced
  • 1 1/2 cups cooked thi colour quinoa
  • 2 cups canned or cooked white beans
  • 1 cup tomato sauce (I used Napoletana with chunky tomatoes and herbs)
  • small bunch fresh coriander, chopped
  • 1/2 cup grated dairy-free cheese
  • salt and pepper, to taste


  1. Heat oil in a frying pan over medium heat and add onions. Cook for 3-5 minutes or until onions are golden brown. Add garlic and cook for another 30 seconds. Add quinoa, beans and tomato sauce, stir to combine and cook for 5 minutes. Turn the heat off and stir in coriander.
  2. Preheat oven to 180°C. Stuff peppers with the bean mixture and place in a square baking dish with about 1/2 an inch of water on the bottom. Sprinkle with cheese on top and bake for 25-30 minutes or until tender. Enjoy right away!
