Vegan Lentil Burgers

Ingredients

  • For the Fritters:
  • 2 cups cooked lentils
  • 2 carrots grated
  • 1 garlic clove, minced
  • 2 tablespoons chia seeds
  • 2 tablespoons water
  • 1/2 cup breadcrumbs
  • 1/4 cup all-purpose flour
  • oil, for frying
  • To Assemble:
  • mashed avocado
  • tomato slices
  • green lettuce
  • pickles
  • burger buns

Method

  1. Place all the fritter ingredients into a blender and process until smooth. Form 6 fritters. Heat vegetable oil in a large skillet over medium heat. Fry the fritters for 3 minutes on each side until golden. Assemble your burgers and enjoy immediately.
