Vegan Palak Paneer with Tofu

Creamy homemade palak paneer curry with tofu and brown rice. Easy to follow recipe and tastes wonderful.

Ingredients

  • 250 grams spinach, leaves only
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon garam masala
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon turmeric
  • 1 cup diced tomatoes and their juices
  • 1 green chili, chopped
  • salt, to taste
  • 200 grams firm tofu, cubed

Method

  1. Boil spinach for 3 minutes, drain and place into a cold water bath to keep the green colour. Drain the spinach, and puree it in a food processor, set aside for later use. In a frying pan heat the oil, add garam masala and cumin seeds, cook for a few seconds. Once spices splutter add in onions and garlic, cook for 3 minutes or until onions are golden brown. Add ginger and turmeric, cook for 30 seconds and add tomatoes. Cook for 3 minutes. Add chili, pureed spinach and stir well. Season to taste and simmer for 5-6 minutes or more till the spinach is cooked. Add cubed tofu, mix well and remove from the heat. Serve warm with rice and naan bread. Enjoy!
