Vegan Pizza with Roasted Pumpkin and Grilled Vegetables

Ingredients

  • 1 small butternut squash pumpkin
  • 1 teaspoon Italian seasonings
  • 1 prepared pizza crust of your choice
  • grilled veggies of your choice (capsicum, tomato, mushrooms, zucchini) olives, non-dairy cheese

Method

  1. Preheat oven to 180°C. Cut the butternut squash into cubes and put it in a plastic bag with oil and seasoning. Seal the plastic bag and give it a good share. Arrange the butternut squash cubes on the baking tray lined with parchment paper and bake for 20 minutes until soft and tender. Take it out from the oven and let it cool.
  2. Meanwhile grill the vegetables, place the roasted butternut squash into a blender and process until creamy and smooth. Spread the mixture over the pizza base, add the grilled vegetables and toppings of your choice. Sprinkle with non-dairy cheese (optional).
  3. Bake at 200°C for 10 mins or until cheese has melted and the pizza is cooked right through. Enjoy immediately!
