Vegan Pumpkin Gnocchi

Try my amazing new recipe for these warm and super filling vegan pumpkin gnocchi. They`re chewy, doughy and will melt in your mouth.

Yields: 4-6


  • 1 tablespoon chia seeds
  • 3 tablespoons water
  • 1/2 butternut squash, peeled and cubed
  • 2 garlic cloves, minced
  • 2 large potatoes, peeled and cubed
  • 1-2 cups all-purpose flour + more if needed


  1. Place squash and potato cubes in a steamer bowl and steam for 25 minutes or until soft. Once ready let cool to a room temperature.
  2. Place cooked squash cubes, chia seeds and water in a blender and pulse until smooth. Set aside and let sit for 15 minutes.
  3. In a large mixing bowl using a potato masher, mash potatoes, add in squash mixture and flour. Mix everything to combine until soft dough forms. Lightly sprinkle the surface with flour and divide the dough into 8 even pieces. Roll the divided dough into a long rope (about 1/2” thick) and cut out 20 equal pieces. Roll each piece through a gnocchi paddle. Repeat until all the dough has been used.
  4. Bring a large pot of water to a boil. Season with salt. Add gnocchi and cook until they rise to the top, about 5 minutes. Serve gnocchi warm and enjoy immediately!
