Preheat oven to 200°C. Break the head of cauliflower into bite-sized florets.
In a medium bowl combine together soy milk, flour and pinch of salt. Dip the florets into the flour mixture and arrange on the baking tray. Bake for 10 minutes. Take them out from the oven and let cool slightly.
In a separate bowl combine together oil, maple syrup, paprika, chili, cayenne, lemon juice and garlic powder. Dip the cauliflower wings into spicy mixture. Coat evenly. Arrange on the baking tray and pop them back in the oven. Bake for another 10 minutes. Serve and enjoy!
