Preheat oven to 180°C and line a baking tray with parchment paper.
Pat dry grated sweet potatoes with paper towels and place in a large bowl. Add in onions, oil, thyme, salt, and pepper. Stir to combine. Using spatula, form hash browns on the prepared baking tray and sprinkle with additional oil on top.
Bake for about 30 minutes or until golden brown. Serve warm and enjoy immediately.
