Snack time has never been better with these crispy and scrumptious oven baked vegan nuggets made with chickpeas and bulgur.

1/2 cup bulgur
1 can organic no added salt chickpeas
1 small white onion, finely chopped
1 tablespoon nutritional yeast
2 garlic cloves, minced
1 teaspoon oregano
1 teaspoon thyme
1 teaspoon paprika
salt and pepper, to taste
1/2 cup panko breadcrumbs
Cook bulgur according to the package directions. Add cooked bulgur and the rest of the ingredients except for the breadcrumbs into a food processor. Pulse until mixture comes together and forms a sticky paste.
Preheat oven to 180°C and line a baking tray with parchment paper. Using your hands form tablespoons of the mixture into a nugget shape. Dip each nugget into breadcrumbs to coat evenly on each side. Arrange nuggets on the prepared baking tray and bake for 15-20 minutes or until golden brown. Enjoy!
