These crispy baked zucchini bites make a perfect healthy snack or a great addition to a lunch box.

Ingredients
2 tablespoons chia seeds
6 tablespoons water
2 medium zucchini
2 carrots, grated
1/2 cup shredded dairy free cheese
3 tablespoons gluten free flour
salt and pepper, to taste
Method
Preheat oven to 180C° and line a baking tray with parchment paper. Mix chia seeds and water together in a small bowl and let it sit for 10 - 15 minutes until the mixture becomes gel.
Grate zucchini and squeeze out as much excess moisture as possible. Transfer to a bowl. Mix in chia seed mixture, carrots and flour. Season to taste.
Form bite size fritters with your hands and arrange on the prepared tray. Spray with olive oil and bake for 15 to 20 minutes or until golden brown. Enjoy.
