Baked Zucchini Chips

  • 3 medium zucchini
  • 1 cup soy milk
  • 1/2 all-purpose flour
  • 1 teaspoon Italian seasonings
  • 1 cup bread crumbs


  1. Preheat oven to 180°C and line a baking tray with parchment paper.
  2. Cut zucchini into “chips”. In a bowl combine soy milk, flour and Italian seasonings. Dip the “chips” into the flour/milk mixture first, then roll in bread crumbs.
  3. Transfer coated zucchini chips to the prepared baking tray. Bake for 20-25 minutes until golden brown. Enjoy!
