BBQ Mini Eggplant Pizzas

  • 1 large eggplant
  • 1 tablespoon olive oil
  • salt and pepper, to taste
  • Toppings:
  • cherry tomatoes
  • sliced olives
  • baby spinach
  • dairy-free cheese
  • fresh basil leaves etc


  1. Preheat BBQ to medium heat. Slice eggplant into 1 cm thick slices. Sprinkle with olive oil and season to taste. Place the eggplant slices on the BBQ and grill for about 10 mins or until soft and cooked through. Add toppings of your choice on each slice, serve immediately and enjoy!


You can also pop them in the oven instead and bake for 10 to 15 minutes at 180°C.
