Beetroot Sausage Rolls

  • 2 sheets puff pastry, thawed
  • 1 potato or sweet potato, cooked
  • 2 beetroots, cooked
  • 1 carrot, grated
  • 1/2 cup cooked green peas
  • 1/2 teaspoon cumin
  • salt and pepper, to taste
  • 1/4 cup melted dairy-free butter
  • 2 tablespoons poppy seeds


  1. Place potato, beetroots, carrots, peas and spices into a blender and process until smooth.
  2. Preheat oven to 180°C and line a baking tray with parchment paper. Lay out 2 sheets of puff pastry, cutting each in half lengthwise. Add the beetroot mixture along the long edge and roll the pastry over to seal. Cut into 6 small rolls. Repeat with the remaining pastry. Brush each roll with melted butter and sprinkle with poppy seeds. Bake for 20-25 minutes or until golden brown. Enjoy.
