2 sheets puff pastry, thawed
1 potato or sweet potato, cooked
2 beetroots, cooked
1 carrot, grated
1/2 cup cooked green peas
1/2 teaspoon cumin
salt and pepper, to taste
1/4 cup melted dairy-free butter
2 tablespoons poppy seeds
Place potato, beetroots, carrots, peas and spices into a blender and process until smooth.
Preheat oven to 180°C and line a baking tray with parchment paper. Lay out 2 sheets of puff pastry, cutting each in half lengthwise. Add the beetroot mixture along the long edge and roll the pastry over to seal. Cut into 6 small rolls. Repeat with the remaining pastry. Brush each roll with melted butter and sprinkle with poppy seeds. Bake for 20-25 minutes or until golden brown. Enjoy.
