1 cup cooked black beans
2 cups baby spinach leaves
1 cup chopped parsley or cilantro
1/2 teaspoon chili
1/2 teaspoon coriander
1 cup sliced mushrooms
1/2 cup grated dairy-free cheese
In a large mixing bowl mix all the toppings together. Add about 2 tablespoons of the filling on each tortilla, fold over and place it in the quesadilla maker. Cook one tortilla at a time. Close the lid and let it grill for 3–5 minutes, or until tortilla is crispy. Repeat with the remaining tortillas. Cut in mini triangles and enjoy right away.
