Cheesy Baked Potato Croquettes

Super easy-to-make appetizer recipe. Crispy baked croquettes filled with creamy mashed potato and cheese, coated in bread crumbs and hemp seeds.

  • 250 g mashed potato (about 4 potatoes)
  • 1 cup grated cheese
  • 1/2 cup all-purpose flour or gluten-free flour
  • 2 eggs beaten
  • 1/2 cup bread crumbs
  • 1/2 cup hemp seeds
  • salt and pepper, to taste


  1. Preheat oven to 180°C and grease a baking tray. In a mixing bowl combine mashed potatoes and cheese. Form the mixture into croquettes and roll them in flour, then dunk into beaten egg and coat in bread crumbs and hemp seeds.
  2. Transfer the croquettes into the prepared baking tray and bake for 20 minutes turning halfway through. Serve with mashed avocado or tomato sauce. Enjoy!
