Preheat oven to 200°C and line two baking trays with parchment paper.
Place ricotta, tomatoes, feta, baby spinach, basil, salt and pepper into a large bowl and stir until just combined. Cut pastry sheets in half diagonally and then again, you will have four triangles. Place about 2 tablespoons of the filling on each triangle. Fold the pastry in half to enclose the filling and crimp edges to seal. Repeat until all the pasty is used. Place on a baking sheet, and brush tops with melted butter.
Bake for about 20 minutes or until golden. Serve warm or at room temperature. Enjoy.
