Prep Time: 25 mins
Cook Time: 20 mins
Makes : 12

  • 250 grams ricotta cheese
  • 100 grams semi-dried tomatoes, roughly chopped
  • 50 grams feta cheese, crumbled
  • 1 cup baby spinach
  • handful basil leaves
  • salt and pepper to taste
  • 3 sheets of puff pastry, thawed
  • 2 tablespoons melted butter, for brushing

  1. Preheat oven to 200°C and line two baking trays with parchment paper.
  2. Place ricotta, tomatoes, feta, baby spinach, basil, salt and pepper into a large bowl and stir until just combined. Cut pastry sheets in half diagonally and then again, you will have four triangles. Place about 2 tablespoons of the filling on each triangle. Fold the pastry in half to enclose the filling and crimp edges to seal. Repeat until all the pasty is used. Place on a baking sheet, and brush tops with melted butter.
  3. Bake for about 20 minutes or until golden. Serve warm or at room temperature. Enjoy.
