Crispy Baked Loaded Pumpkin Chips

Try this ultimate sharing snack! Crispy baked pumpkin chips loaded with creamy mashed avocado, black beans and vegan sour cream.

  • 1/2 pumpkin, peeled
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon Italian seasonings
  • 1 teaspoon oregano
  • 1/2 teaspoon cayenne pepper or to taste
  • 2 avocados, peeled deseeded and mashed
  • 1/2 cup organic canned black beans
  • 1 cup sliced cherry tomatoes
  • 1/2 cup sliced black olives
  • 1/2 cup vegan sour cream
  • salt and pepper, to taste
  • lemon wedges, for serving


  1. Preheat oven to 180°C and line a baking tray with parchment paper. Cut pumpkin into your desired thickness and length of chips. Place in a large bowl and toss well with oil and spices. Spread the chips evenly on the prepared baking tray and bake for 20 minutes or until soft and crispy.
  2. To serve, spread mashed avocado over the chips, top with black beans, tomatoes, olives and vegan sour cream. Season to taste and serve with lemon or lime wedges. Dig right in and enjoy!
