Easy 3-Ingredient Beetroot Sausage Rolls

Tasty way to enjoy beetroot! Easy, healthy and so yummy these sausage rolls with crispy puff pastry make a great snack or lunch option.

  • 2 sheets puff pastry, thawed
  • 2 medium white potatoes, cooked and grated
  • 2 medium beetroots, cooked and grated
  • small bunch fresh coriander, finely chopped
  • salt and pepper, to taste
  • 1/4 cup melted dairy-free butter, for brushing
  • 2 tablespoons poppy seeds
  • 2 tablespoons sesame seeds


  1. In a mixing bowl combine potatoes, beets and coriander. Season to taste.
  2. Preheat oven to 180°C and line a baking tray with parchment paper. Lay out 2 sheets of puff pastry, cutting each in half lengthwise. Add the beetroot mixture along the long edge and roll the pastry over to seal. Cut into 6 small rolls. Repeat with the remaining pastry. Brush each roll with melted butter and sprinkle with poppy and sesame seeds. Bake for 25 minutes or until golden brown. Enjoy.
