Gold Squash Fritters with Cashew Semi Dried Tomato Dip

  • 1 cup raw cashews
  • 180 g semi dried tomatoes
  • 1-2 garlic cloves, minced
  • 1-2 tablespoons olive oil
  • 7 small gold squash buttons, grated
  • 1 small sweet potato, peeled and grated
  • 1 carrot, grated
  • 1 egg
  • 2 tablespoons all-purpose flour
  • 1 teaspoon Italian seasonings
  • 1/2 teaspoon sweet paprika
  • salt and pepper, to taste


  1. For the cashew tomato dip: Place cashews in a blender and process for one minute. Add semi dried tomatoes, garlic and oil and blend until smooth and creamy.
  2. For the fritters: In a large mixing bowl add squash, sweet potato, carrots, egg and flour. Mix together until just combined.
  3. Form patties with your hands. Heat the oil in a frying pan over medium heat. Cook patties for a few minutes on each side until golden brown. (Or pop them in oven for 15-20 minutes instead).
  4. Serve warm with cashew tomato dip and enjoy.
