Homemade Veggie Nuggets

  • 1 carrot, grated
  • 1 cup cooked chickpeas
  • 1 small sweet potato, grated
  • 2 cups broccoli florets
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup soy milk
  • 1/2 cup all-purpose flour
  • 2 cups bread crumbs


  1. Preheat oven to 180°C and line baking tray with parchment paper. Place carrots, chickpeas, potato, broccoli, onion powder, black pepper and oil in a food processor and pulse until well combined.
  2. Form mixture into balls. You will get about 25 nuggets. Flatten slightly. In a bowl combine soy milk and flour. Coat each veggie nugget in flour/milk mixture, then roll in bread crumbs.
  3. Arrange on the baking tray and bake for 20 minutes or until golden brown. Serve immediately and enjoy!
