Preheat oven to 180°C and line baking tray with parchment paper. Cut sweet potato into 1 cm thick slices. Poke each slice with a fork a few times. Arrange on the baking tray and sprinkle with olive oil. Bake for about 30-40 minutes until tender. Take out from the oven, add toppings of your choice and pop back in the oven for another 5 minutes. Enjoy immediately!
