Pan Fried Zucchini Pizza

A pizza that`s ready in 10 minutes, low in carbs and super delicious. Simply a recipe worth trying. You can add any of your favourute pizza toppings. I used baby spinach, cherry tomatoes, dairy-free cheese, fresh coriander and hemp seeds.

For this recipe you can also use 1 egg and 2 tablespoons of whole-meal flour, instead of chickpea flour and water.

  • 1 medium zucchini
  • 1/2 cup chickpea flour
  • 1/2 cup water
  • 1/2 cup chopped coriander
  • 1 teaspoon chipotle seasoning
  • salt and pepper, to taste
  • pizza toppings of your choice


  1. Grate zucchini and squeeze out as much liquid as possible. In a mixing bowl combine grated zucchini, chickpea flour, water, coriander, and chipotle seasoning. Transfer the mixture into a lightly greased frying pan and spread out into a circle.
  2. Fry on low heat for 7 minutes or until the bottom is crispy brown, flip and fry for another 5 minutes. Add toppings of your choice and enjoy.
